Banana Choc Chia Pudding

I am a firm believer that everything should come in chocolate flavour, so the chia pudding received a make-over and it is chocolicious!  Whip these banana choc chia puddings up for easy snacking during the week.

Why chia? They are an incredible source of combined nutrients.  They are high protein, contain a decent dose of omega-3 fats, lots of antioxidants and more calcium than milk!

Banana Choc Chia Pudding

[Paleo, Vegan, Grain free, Gluten free, Dairy free, No Refined Sugars]

INGREDIENTS

For the pudding mix:

  • 1 1/2 cups coconut milk

  • 1/3 cup chia seeds

  • 1/4 cup cacao

  • 1/2 tsp vanilla extract

  • 1/4 tsp cinnamon

  • Pinch rock salt

  • 3 tbsp maple syrup*

Toppings:

  • 1 cup coconut yoghurt

  • 1 banana (chopped)

  • 12 raspberries OPTIONAL (and mint leaves to garnish)

INSTRUCTIONS

  1. Combine the coconut milk, chia seeds, cacao, vanilla, cinnamon and salt in a bowl, use a whisk to combine.

  2. Add the maple syrup and mix to combine.

  3. Place in the fridge for 3-5 hours, or over-night.

  4. Remove from the fridge and stir with a fork to separate the seeds.

  5. To assemble, layer chopped banana, chia mix, coconut yogurt and garnishes between 4 small cups/jars/containers.

  6. Serve chilled form the fridge and enjoy the chocolatey deliciousness!
