Easy-peasy lunch coming right up! Who doesn't love a fresh and crispy lettuce wrap sprinkled with smokey paprika? Yep, my paprika obsession continues..... Give this a go!

Easy-Peasy Lettuce Wraps

[Grain free, Gluten free, Dairy free, No Refined Sugars]

INGREDIENTS

  • 6 iceberg lettuce leaves

  • 6 slices organic roast turkey (or chicken)

  • 1/2 cucumber sliced

  • 1 avocado peeled and sliced

  • 150 grams hummus

  • Pinch smokey paprika

  • Pinch salt and pepper

INSTRUCTIONS

  1. Lay out a lettuce leaf and top with hummus, cucumber, avo and turkey/chicken.

  2. Sprinkle with salt, pepper and liberal amounts of smokey paprika.

  3. Roll the leaf and secure with a toothpick/dry noodle if you would like them to hold their shape.

  4. Repeat the process with the remaining ingredients.

Servings: 6 wraps

RECIPE NOTES

Try this recipe with a variety of fresh ingredients you have in the fridge. I like capsicum, tomato, beetroot and carrot in my wraps. You can also change up your protein source for salmon, prawns, lamb or tempeh to make them vegan. I'm obsessed with smokey paprika right now but any herb or spice combo, lemon or lime juice will add serious flavour. Mix it up and eat the rainbow!
