Chocolate Birthday Cake Brownies
So this week I’m officially a little older and, apparently, a little wiser… After MANY attempts at perfecting this recipe, taste-testings and random weekend bake-offs, I am so excited to share with you my new favourite gut-friendly treat: chocolate birthday cake brownies!
They taste like a decadent chocolate cake with the fudgy texture of a brownie, yummo! We have been indulging in this divine little treat pretty frequently this past few weeks, with lots of birthday celebrations. And we all know that no birthday is complete without a gloriously delicious gut-healthy taste-sensation. Please, please, please give this simple recipe a go, I know you will love it as much as my friends and I do!
Chocolate Birthday Cake Brownies
[Paleo, Grain free, Gluten free, Dairy free, No Refined Sugars]
INGREDIENTS
1 1/4 cups almond meal (125g)
1/2 cup cacao (50g)
1 tsp baking powder
1/4 tsp rock salt
2 medium eggs (room temperature)
1 cup unsweetened almond milk
1/3 cup raw honey
1/4 cup almond butter
2 tsp vanilla extract
INSTRUCTIONS
Pre-heat the oven to 180 degrees Celsius.
Line a square baking tin with parchment paper.
Combine almond meal, cacao, baking powder and rock salt in a mixing bowl using a spatula.
Add eggs, almond milk, honey, almond butter and vanilla extract to a blender and combine for 1 minute, until the mixture starts to froth.
Pour the wet ingredients into the dry and stir to combine using a spatula.
Pour the batter into the lined baking tray and place in the oven.
Bake for 25-30 minutes, or until it springs back when lightly touched.
Remove from the oven and cool before serving.
Servings: 16 slices
