Introducing my new obsession just in time for Easter- CHOCO-COCO BARK! Super low in carbs and a boost of good quality fats, this little melt-in-your-mouth morsel is an all round winner for healthy eaters at Easter.
[Grain free, Gluten free, Dairy free, No refined sugar]
2/3 cup coconut oil (melted)
1/2 cup almond butter
100 grams organic 85% dark chocolate (melted)
30 grams desiccated coconut
50 grams almond slithers
100 grams chopped macadamia nuts
1 tbsp raw honey
Pinch rock salt
Line a baking tray with baking paper.
Using a mixing bowl and dessert spoon, combine all ingredients well and pour onto the baking tray.
Freeze for 30 minutes, then remove from the freezer and use a knife and your fingers to break into pieces.
Store in the fridge or freezer... if you have leftovers.
