Superfood Bliss Balls

I've been snacking on bliss balls for a few years now when we travel. I whip up a huge batch the night before we leave and stash them in my carry on bag. If you use all plant-based products then there is no need to refrigerate. They last around 5 days if kept in a sealed freezer bag. Try these for your next trip!

Superfood Bliss Balls

[Grain free, Gluten free, Dairy free, No refined sugar]

INGREDIENTS

  • 12 fresh medjool dates (pitted)

  • 1 cup almond meal

  • 60 grams protein powder (vegan or WPI)

  • 20 grams cacao

  • 1 tbsp spirulina

  • 1 tbsp raw honey (to sweeten if needed)

  • 1/2 cup goji berries

  • 2 tbsp tahini (or other nut butter; I like almond)

  • 4 tbsp water

  • 1/2 cup desiccated coconut (to roll)

INSTRUCTIONS

  1. Add dates to the food processor and blitz for a few seconds.

  2. Add all other ingredients, except for the desiccated coconut, and process to combine.

  3. If needed, add a little extra water until the batter is able to be clumped when you squeeze it in your hand.

  4. Form the batter into balls and roll in desiccated coconut.

  5. Place in the fridge for 1 hour to set, then serve!
