Paleo AIP Apple Berry Crumble

If you're looking for a sweet treat on Christmas morning that will feed the whole family, including those with digestive issues, then look no further than this Paleo-AIP friendly Apple Berry Crumble. It's grain, dairy, legume, egg, nightshade, nut and seed-free and has also been husband tested, passing with flying colours!

INGREDIENTS

Crumble

  • 350 ml coconut oil cold

  • 1 cup coconut flour

  • 1 cup arrowroot flour

  • 3/4 cup coconut sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp salt

  • 125 ml water

Filling

  • 4 apples chopped into small cubes

  • 1 cup raspberries

  • 1/2 cup dried cranberries

  • 60 ml coconut oil melted

  • 2 tbsp lemon juice

  • 1 tsp ground cinnamon


INSTRUCTIONS

  1. Pre-heat oven to 180°C.

  2. Combine coconut flour, arrowroot flour, coconut sugar, cinnamon and salt in a large bowl.

  3. Using a butter knife, cut the chilled coconut oil into the dry ingredients until you form small lumps. Sprinkle cold water over the top and gently mix, making sure the crumble topping stays chunky. Set aside.

  4. In a separate bowl, combine the apples, raspberries, cranberries, coconut oil, lemon juice and cinnamon. Place in a rectangular oven baking dish and cover with the crumble topping.

  5. Bake for 30-40 minutes or until lightly browned. Remove from the oven and allow to cool slightly before serving.
