Paleo AIP Apple Berry Crumble

If you’re looking for a sweet treat on Christmas morning that will feed the whole family, including those with digestive issues, then look no further than this Paleo-AIP friendly Apple Berry Crumble. It’s grain, dairy, legume, egg, nightshade, nut and seed-free and has also been husband tested, passing with flying colours!

Instructions
  1. Pre-heat oven to 180°C.
  2. Combine coconut flour, arrowroot flour, coconut sugar, cinnamon and salt in a large bowl.
  3. Using a butter knife, cut the chilled coconut oil into the dry ingredients until you form small lumps. Sprinkle cold water over the top and gently mix, making sure the crumble topping stays chunky. Set aside.
  4. In a separate bowl, combine the apples, raspberries, cranberries, coconut oil, lemon juice and cinnamon. Place in a rectangular oven baking dish and cover with the crumble topping.
  5. Bake for 30-40 minutes or until lightly browned. Remove from the oven and allow to cool slightly before serving.

    Hi Bella, I made this crumble according to your recipe, but there seemed to be way too much oil! It was dripping with oil and I literally had to pour it out of the finished dish.
    I’ve calculated it, and this recipe has 1 2/3 cups of coconut oil. Is this correct?

      Hi Jordana, I’m so sorry the recipe hasn’t worked for you. The coconut oil quantity is correct- 350mL – but I’m wondering whether it wasn’t chilled. You need to use chilled coconut oil like you would use butter in a standard recipe and cut it into the crumble topping until the topping goes chunky. It sounds like your coconut oil melted too quickly. Please give this a try next time, the recipe is really lovely and worth it!
