Allergy Friendly Cookies - Gluten, Dairy & Egg Free!

I am a sucker for the challenge of gluten, dairy and egg-free baking, creating options for my clients who are on gut-healing protocols. So, the next delicacy I wanted to conquer is the chewy and moist oatmeal cookie alternative that helps heal your gut with the addition of gelatin.  I like mine plain and simple with... a turmeric latte of course!

Allergy Friendly Cookies

[Paleo, Grain free, Gluten free, Dairy free, Egg free, No Refined Sugars.]

INGREDIENTS

  • 1/4 cup ghee or coconut oil (ghee gives a buttery taste)

  • 1 tbsp gelatin powder + 3 tbsp water combined to form a gel

  • 1/3 cup honey

  • 1 tsp pure vanilla extract

  • 2 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • 1 cup almond meal

  • 2 tbsp coconut flour

  • 1/2 tsp bicarbonate soda (baking soda)

  • 1/4 tsp rock salt

  • 2 tsp finely ground flaxseeds (omit for SIBO diet)

  • 3/4 cup shredded coconut

  • 1/2 cup raisins OPTIONAL ADD-INS (you can also add chopped nuts, other dried fruit or chocolate chips)


INSTRUCTIONS

  1. Preheat oven to 180ºC, or 160ºC for a fan-forced oven.

  2. In the bowl of a stand or hand-mixer, beat together the ghee and gelatin gel for 1 minute.

  3. Pour in the honey and vanilla extract and beat together for another minute.

  4. In a second bowl, combine cinnamon, nutmeg, almond meal, coconut flour, bicarbonate soda, rock salt and ground flaxseeds using a whisk.

  5. Slowly add the dry ingredient mix into the wet and mix for another minute until combined.

  6. Add the shredded coconut and any other optional add-ins then mix again for another minute.

  7. Using a tablespoon, take a golf-ball sized scoop of the mixture and drop onto a lined baking tray.

  8. Use your finger or a fork to gently press down to create 1cm thick dough circles.

  9. Bake for 12 minutes or until the edges are lightly browned.

  10. Serve with a turmeric latte!
